My Moroccan spiced salmon with seasoned veggies is a quick dinner recipe that everyone will love! Its jam packed with flavour and is great if you don’t have a lot of time for prep.
INGREDIENTS
Salmon fillets
Natural yogurt
Potatoes
Aubergine
For the salmon marinade, mix together:
Natural yogurt (enough to coat your salmon well)
1 tsp. turmeric
1 tsp. coriander
1 tsp. cumin
1 tsp. chopped garlic (or garlic powder if you don’t have time!)
For the vegetable seasoning, mix together:
1 tsp. cumin
1 tsp. coriander
1 tsp. chili powder
1 tsp. sea salt
METHOD
1) Chop the potato and aubergine into bite-sized pieces as season with your vegetable seasoning.
2) Coat your salmon with your marinade and place on a separate baking tray (you can marinate your salmon the day before and store in the fridge if you have time).
2) Place the spiced potato and aubergine mixture into a baking tray and add some olive oil. Give everything a good mix up.
3) Cook for 1 hour at 180 °C. Add the marinated salmon 20-22 minutes before the end.
4) Serve with a few dollops of natural yogurt and fresh coriander. Enjoy!
