These light and fluffy pancakes are a healthy breakfast choice and are guaranteed to fill you up until lunchtime. After all, research shows that people who have a high protein breakfast are less likely to binge on junk food later on in the day. Scroll down for the full recipe.
This recipe takes minutes to prepare and is a great way to start your day with a protein boost (with whopping 27g protein per serving to be exact!) and will leave you feeling energised and ready for the day ahead. (NB: Opt for gluten free oats if you want to make this recipe gluten free).
Ingredients 1 x medium ripe banana 2 x eggs 1/3 cup of oats 2 tsp. hemp protein powder (I like Naturya)
1 tbsp. coconut oil
Optional Toppers Handful of blueberries/raspberries/strawberries
1 tsp. cinnamon
1 tbsp. almond butter
Natural yoghurt Drizzle of maple syrup 1 tbsp. almond butter Instructions 1) Put the oats in a blender and blend until fine.
2) Add the eggs, hemp protein powder and banana and whizz up for 1 minute. 3) Head a small frying pan over a medium heat and add the coconut oil 4) Pour 1/3 of the mixture into the frying pan and cook on one side for about 1 minute, then turn and cook on the other side (or until golden brown). Repeat until you have used all of the mixture. 5) Serve with any of the optional toppers and enjoy!
